What is an artisan?
An artisan is a skilled person who makes or creates objects partly or entirely by hand. These objects may be functional or strictly decorative, for example, furniture, decorative art, sculpture, clothing, food products, household items and tools and mechanisms such as a clockwork handcrafted by a watchmaker. Craftsmen practise a craft and, thanks to their experience and skills, can achieve the levels of expression of an artist.
Modern-day craftsmen
Today, the adjective “artisanal” is often used to describe manual processing as opposed to an industrial process, as in artisanal mining. Thus, the term “artisanal” is used in marketing and advertising to describe or imply a relationship with the manufacture of handmade food products, such as bread, beverages or cheese.
“Artisan” is a term used to describe foods or products made using non-industrialized methods, often passed down from generation to generation but now in danger of being lost. Tastes and processes, such as fermentation, can develop slowly and naturally, rather than being restricted to mass production.

Artisanal producers need to understand and respect the raw materials they work with, where these materials come from and what’s good about them. They must master the craft of their specific production and have a historical and scientific understanding of what makes the process they are engaged in successful. They must know what tastes good and be sensitive to the impact of their production on people and the environment.
Artisanal food producers improve over time and probably never stop improving or refining their practices, learning from others and from their own mistakes.
